Fried Green Tomatoes

So after all that food shopping on Saturday morning, I was near starving by the time I got home. I wanted something quick, so I decided to try the recipe for fried green tomatoes that I found on the New York Times’ health page.

I had never had fried green tomatoes, so I wasn’t sure how they would turn out. ButIMG_1417 these tomatoes were really beautiful, so how could I not give it a try? Plus, I didn’t want to wait and chance the tomatoes ripening.

So for this recipe, you have to cut the tomatoes into half-inch slices. I recommend that you preheat the oil while doing this so you don’t waste any time.

Now, the recipe calls for cornmeal, but I was fresh out and too hungry to go to the store again,IMG_1421 so I used up the rest of my brown rice flour, which worked just fine. Now, this is basically one of the easiest recipes I’ve come across and takes about 10 minutes from start to finish. Essentially, you throw together some cornmeal, salt and pepper, and coat both sides of the tomato slices. Then you throw them into the frying pan. So simple and so tasty. Vegan Yum Yum also posted a fried green tomatoes recipe, which I think looks a lot prettier and tastier than this one, but the Times recipe was good for something quick and filling.

So when the tomatoes are done, you can serve them over greens like Vegan Yum IMG_1429Yum recommends, but I ate them by themselves because they were just so good. I had some leftovers that my sister, Jill, and I ate later in the day, and surprisingly, I liked them better when they were cold. Jill even came up with the idea to make a sandwich with them in the future, which I think I’ll try. I think that would be a really adorable finger sandwich, actually. You could top it with greens and a bit of Vegenaise. Yum! I’m getting hungry just thinking about it!
